I love to knit and crochet but I also enjoy gardening, cooking, photography and a craft cocktail or two. What I’m cooking: Cauliflower Risotto.
I love real risotto with the thick, rich rice and cream but that’s not always manageable on a week night so I’ve been substituting this cauliflower risotto for a side dish lately. It’s made from riced cauliflower with garlic and bacon and it’s rounded out with some cream and parmesan to make it extra tasty! I’ve been making it about once a week.
Knitting inspiration: Seamless Knit Sweaters in 2 Weeks (affiliate links shared)
Knitting a sweater can seem like a daunting task if you have to sew all of those pieces together, but Seamless Knit Sweaters in 2 Weeks by Marie Greene blows that fear right out the water! The sweaters in this book are all made in one piece and can really be knit in a reasonable amount of time like the author says.
There’s 20 patterns and each one features a simple twist on a classic style. You’ll want to knit at least 5 from this book alone; I know I do!
Where I’m knitting: In my garden!
I’m loving the fresh spring blossoms that pop up every day. Being in Southern California has led me to become a succulent gardener but I can’t say I mind because these drought tolerant plants are amazing!
